One year of Kaiseki at Four Seasons Hotel DIFC
KIGO sits inside Four Seasons Hotel DIFC. Four Seasons says the restaurant has spent a year bringing Kaiseki tradition to Dubai, with menus that shift with the ingredients, atmosphere and emotion of each season. Chef Aki, as the house calls him, combines traditional technique with a contemporary hand so each ingredient can take the centre.

The Autumn Menu on the board
Autumn in Kaiseki is harvest, abundance and reflection. Four Seasons names Chef Aki's favourite season as the driver for the second edition of the Autumn Menu. Familiar elements sit beside fresh creations drawn from Japan's seasonal produce.
The Signature Sushi Kaiseki opens with Vinegared Barracuda with Dried Persimmon, Chawanmushi with Grilled Eggplant Chilled Purée, and Grilled Pacific Saury. Autumn Mushrooms on a Hnba Leaf follow, inspired by Chef Aki's walks through Japan's mountains. Slow-Braised A5 Kumamoto Black Wagyu, Seasonal Sushi Selections, Miso Soup and premium Japanese fruits close the arc of land and sea.
The Autumn Menu will now return every September. That turns a one-off into a calendar fixture buyers can plan around year after year.
Chef Aki and the story of the season
Chef Aki frames Kaiseki as appreciating the moment and letting each season tell its own story. Autumn means abundance, reflection and ingredients at their peak. Through KIGO he wants guests to taste not only the flavours of Japan, but the philosophy behind each dish.
Chef Izu Ani of Fundamental Hospitality adds that a year in, KIGO keeps proving cuisine is never static. Each season brings fresh ingredients and fresh ways to respect Japanese tradition. Guests become part of that journey. The anniversary is a next chapter, not a closing line.
