Taiga opens teppanyaki on Bluewaters Dubai
Taiga opened on Bluewaters on 1 October with a 19-seat omakase teppanyaki counter. Kobe, Matsusaka and Ozaki wagyu plus Toyosu seafood.
Taiga opened on Bluewaters Island on 1 October 2026. Khaleej Times and FACT Magazines report a 19-seat omakase teppanyaki counter from TakaHisa Group, with A5 Kobe, Matsusaka and Ozaki wagyu and seasonal seafood flown from Japan. Heat. Timing. A meal that happens a few feet from your seat.
This is not another Bluewaters room selling a skyline frame and a capacity cell. It sells the feeling of watching the plate take shape, and trusting the season more than a fixed card.
Bluewaters and a third TakaHisa house
Taiga sits on Bluewaters Island beside Maison Shibuya Supermarket. The group's flagship TakaHisa is a short walk away at Banyan Tree Dubai. FACT Magazines frames the opening as TakaHisa Group's third address on the island, with fine dining, retail and teppanyaki now close on the island.
Group Executive Chefs Takashi Namekata and Hisao Ueda, known as Chef Taka and Chef Hisa, lead the counter. Service follows an omakase format. The selection sits with the chefs. The menu moves with what arrives from Japan. That helps buyers briefing a Bluewaters Japanese night, a tight counter set, or a private room for a small business table.
Hours run daily from noon until midnight. Reservations sit on the venue site at taigarestaurant.com. Sellers reading the floor hear a long day. Lunch into late dinner. Counter energy with table formats beside it.
The emotional problem this room solves is simple. Plenty of Japanese briefs stall between a theatrical show that forgets the plate and a closed kitchen that never lets the guest feel the craft. Taiga sells the bridge. Sit close. Hear the teppan. Stay for the timing.
Wagyu, Toyosu seafood and shun
Khaleej Times and FACT Magazines list A5 BMS12 wagyu across Kobe, Matsusaka and Ozaki. Each cut needs its own heat and seconds. Chef Hisa, quoted in Khaleej Times, notes that a few seconds either way changes the flavour, and that the three beefs behave differently on the grill.
Seafood and produce arrive from Japan throughout the week. FACT Magazines says TakaHisa Group runs its own seafood processing facility inside Tokyo's Toyosu Market, with fish and produce reaching Dubai six times a week. Seasonal seafood is cooked the day it lands. Uni and abalone appear when the season allows. The guiding idea is shun, an ingredient at its seasonal peak, served then and not otherwise.
Chef Taka, quoted across Khaleej Times and Arab News Japan, says the aim is to put the seasonality of Japan's seas on the plate, and to let guests taste that richness across the seasons. Those lines come from the press notes. They help a buyer lock a Bluewaters Japanese brief without inventing a menu. Sellers hear kitchen craft that lives on timing, sourcing that moves with the calendar, and hosts who can hold a quiet counter while the grill talks.
Counter, tables and a private room
The heart of Taiga is the 19-seat omakase teppanyaki counter. Beyond it, FACT Magazines and Khaleej Times confirm yakiniku, shabu-shabu and sukiyaki at table seating. A private dining room holds up to eight guests for business dinners, anniversaries and celebrations.
That mix matters for planners. One brief can be a tight counter night. Another can be a table that wants shared grill formats. A third can be a closed room for eight. Same supply line. Same chefs. Different feeling depending on how the set is briefed.
Arab News Japan notes diners can seek an ingredient they enjoyed at dinner in Maison Shibuya next door. Retail and the meal sit beside each other.
What this means for Kattegat buyers and sellers
Buyers, start with the feeling you want, not a capacity cell. Bluewaters Island. Taiga. When the brief is a Japanese counter night, a wagyu and seafood sequence that follows the season, or a private room for eight, you now have a room that is named and a floor story that is live.
Sellers, read the floor. Noon to midnight. Nineteen seats at the teppan. Yakiniku, shabu-shabu and sukiyaki at tables. Private dining for eight. Kobe, Matsusaka and Ozaki at A5. Toyosu seafood six times a week. That is work for kitchen teams who can hold precise grill timing, floor talent who keep a quiet counter warm, and planners who need one clear Bluewaters Japanese story instead of a rate card with no soul.
Kattegat sits in the middle. Venues need people who show up. Talent needs rooms that book. Planners need one place where both sides tell the story straight.
We did not invent Dubai hospitality. We turned the trade we already live into a system buyers and sellers can run from the pocket. Days like Taiga on Bluewaters are why the marketplace exists.
Book the counter, brief the set
If you are locking a Bluewaters Japanese night, a teppanyaki counter for a celebration, or talent for a room that already holds season and heat, start with the feeling and the set, not capacity alone.
