Three Cuts and Carnistore team up on Palm Jumeirah Dubai
Carnistore built a dry-aged burger blend just for Three Cuts, Rooftop West, Palm Jumeirah Mall. Why a night made for one room is the one you remember.
Three Cuts, the steakhouse and bar on Rooftop West at Palm Jumeirah Mall, Dubai, now serves a burger made for nobody else. Homegrown butchery and smokehouse Carnistore built a dry-aged beef blend just for this room, and from 6 October it comes with Three Cuts' signature entrecôte sauce and a draft beer, Dubai food magazine nom me reported this week. It replaces the old burger on the Burger & Beers menu, and the first Burger & Beats night was billed with DJ Karrouhat on the decks from 8pm to 10pm.

The night that could have been anywhere
You know this one. A friend says let's grab a burger. You pick somewhere with a nice terrace. The burger is fine. The music is fine. On the drive home nobody can say what made it that place and not the one down the road, because nothing did.

nom me says Carnistore did not hand over a standard patty. It worked the recipe out for Three Cuts specifically, from the cuts of beef and the meat-to-fat ratio down to the grind, the texture and the juiciness. Then it met the steakhouse's own entrecôte sauce on the plate.
That is not a menu tweak. That is two homegrown brands sitting down, asking what this room needs, and making it. nom me says Carnistore takes the same bespoke approach with every restaurant it partners with in Dubai, rather than one blend for everyone.
Three Cuts already thinks this way. Its own website calls it a community-based restaurant and describes a music identity that moves through soul, bossa nova, French pop, Italo disco and nu disco from day to night, with a speakeasy tucked inside that wakes up after dark. So when the burger changed, they did not just print a new menu. They booked a DJ and called it Burger & Beats.
What this means for Kattegat buyers and sellers
Buyers, this is the brief worth stealing. Do not ask a venue for their package. Ask what they would make for your night that nobody else gets. A team lunch with a dish that only exists there.
